Near perfect conditions allowed us to produce this Botrytis wine from Sauvignon Blanc and Semillon fruit. Stone fruits dominate the nose which is supported by citrus undertones. The viscous palate displays apricots and peaches with balanced sweetness. Golden in colour, the wine will develop more honeyed and marmalade characteristics over the coming 3 - 4 years. (375mL)
The fruit for this Sauvignon Blanc Semillon Botrytis was grown by Davydd and Cheryl Westlake near the township of Ballandean. Near perfect conditions of misty cool mornings, mild clear days and no rain were present producing this lush Botrytis Dessert wine. Botrytis Cinerea is a fungus which grows on the berries. This fungus dehydrates the fruit leaving a high concentration of natural sugars. The Botrytis also imparts a stonefruit and apricot characteristic in the wine.
