As the name suggests, in a 'wild' ferment no commercial yeast is added. Instead we encourage the juice to ferment with the indigenous yeasts present on the grape skins. While the outcomes of such ferments can't be predicted, they are often spectacular. Witches Falls have produced a Wild Ferment Chardonnay every vintage since 2005 and have been so pleased with the outcomes, that in 2010 expanded the Wild Ferment Range to include our 2010 Wild Ferment Fiano.
The nose tantalizes with aromas of apricot blossom and stone fruit while almond and nectarine combine on the rich and complex palate. Indigenous yeast, some juice solids and barrel fermetation have contributed to this complex wine.
The fruit for our 2010 Wild Ferment Fiano was grown at Boyland, just a stones throw west of Tamborine Mountain.
Fiano is a very old white variety from the Avellino region of Campania in Southern Italy. While relatively new to Australia, Fiano appears to be well suited to our warmer and warming climates as it is late ripening and resistant to the effects of the sun due to its thicker skins and higher acid levels.
